This Week’s Recipe - Caramelized Onions on Herb Cheese Spread Breads


I prepared this as a warm appetizer and served along a cheese and cold-cuts plate. It is easy to prepare and great in taste.
Ingredients
1 red onion, half-moon-shaped sliced
8 – 10 slices of baguette bread
Boursin or Philadelphia cheese with herbs, spread on the breads
½ handful of pine nuts
Olive oil
Salt and pepper to taste

Preparation
Caramelize onions in a pan with some olive oil. Season to taste. This may take 10 -12 minutes. Meanwhile spread cheese on breads and set them aside. Toast pine nuts in another pan and let them cool. Heat the oven to 180C. When onions are nicely caramelized put them on top of the breads and put them in the oven for 3 – 5 minutes. Before serving sprinkle the pine nuts and drizzle some olive oil. Serve warm.
