I prepared this as a warm appetizer and served along a cheese and cold-cuts plate. It is easy to prepare and great in taste.
Ingredients
1 red onion, half-moon-shaped sliced
8 – 10 slices of baguette bread
Boursin or Philadelphia cheese with herbs, spread on the breads
½ handful of pine nuts
Olive oil
Salt and pepper to taste
Preparation
Caramelize onions in a pan with some olive oil. Season to taste. This may take 10 -12 minutes. Meanwhile spread cheese on breads and set them aside. Toast pine nuts in another pan and let them cool. Heat the oven to 180◦C. When onions are nicely caramelized put them on top of the breads and put them in the oven for 3 – 5 minutes. Before serving sprinkle the pine nuts and drizzle some olive oil. Serve warm.
